Giant Chocolate Chunk Cookies Recipe

Ingredients:

  • 50g unsalted butter, cut into small cubes
  • 100g brown sugar, firmly packed
  • ¼ cup extra virgin olive oil
  • 1 large egg, at room temperature
  • 40g rolled oats, ground into a semi-fine flour
  • 50g white spelt flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon fine sea salt
  • 120g dark chocolate (70% cocoa), roughly chopped

Instructions:

  1. In a small saucepan, melt the butter over low heat until just liquefied. Remove from heat and allow it to cool slightly.
  2. In a separate bowl, whisk the egg until well combined. Process the rolled oats in a food processor until they reach a semi-fine texture. Chop the dark chocolate into roughly 1.5cm pieces.
  3. In a medium mixing bowl, combine the cooled melted butter, brown sugar, olive oil, and whisked egg. Stir vigorously for about 30–60 seconds until the mixture is smooth and cohesive.
  4. Gently fold in the oat flour, spelt flour, baking soda, and sea salt using a spatula, mixing only until the ingredients are just incorporated. Avoid overmixing to maintain the desired cookie texture.
  5. Add 100g of the chopped chocolate to the dough, folding it in gently. Reserve the remaining 20g for later use.
  6. Cover the mixing bowl with plastic wrap and refrigerate for a minimum of 2 hours, or preferably overnight, to allow the dough to firm up.
  7. Preheat the oven to 180°C (fan-forced). Line baking trays with parchment paper.
  8. Using a ¼ cup measuring scoop, portion out the dough, rolling each piece into a smooth ball. Space the dough balls at least 8cm apart on the prepared baking trays.
  9. Lightly flatten each dough ball with the palm of your hand to ensure even baking. Press a few pieces of the reserved chocolate onto the top of each cookie.
  10. Bake one tray at a time for 8–10 minutes, checking for golden edges and slightly set tops. Remove from the oven once done.
  11. Let the cookies rest on the baking tray for 1 minute before carefully transferring them to a wire rack to cool completely.
  12. Once cooled, store cookies in an airtight container to maintain freshness.
